Your copy of XP Pro should work without a problem but something is screwing it up. I would look in the OOBEinfo.ini file, the Unattend.txt file and/or the Winnt.sif file on the CD for the product key and make sure one exists.

It should, and you should be able to drop down on that list and select the operating system you want to install.
